Fall Pumpkin Overnight Oats


The easiest meal prep you will ever experience!

6 Tbs Pumpkin Purée
1 cup Unsweetened almond milk
1/2 cup Plain Low-fat Greek Yogurt
1/2 tsp Pumpkin Pie Spice
1/2 tsp Cinnamon
1/2 Banana Puréed
2 cup Old fashioned oats

Mixed all ingredients together and place into mason jars and it will be ready in the morning!


Mexican Chicken Quinoa Casserole

Unfortunately I forgot to take a picture after making this dish, promise to take one next time!

1 cup of quinoa

1 chicken breast

2 cans Herdez Green Sauce – Salsa Verde 7 oz

1 can Amy’s Organic Refried Black Beans — 15.4 oz

1 white onion

2 cloves garlic

1 bell pepper (I love green but the choice is yours)

1 yellow zucchini

1/2 cup goat cheese

1 avacado

1 cup non-fat plain Greek yogurt

How to:

(Pre-heat oven to 425 degrees)

1 – Cook your quinoa (How to Cook Quinoa – Low Calorie Cooking – About.com) and put it off to the side.

2 – Cut the chicken breast into cubes and brown in pan with a small amount of olive oil, salt and pepper to taste. Add to the pot with the quinoa.

3 – Dice the white onion and saute in pan with a small amount of olive oil, add garlic and mix until translucent. Add diced bell pepper and yellow zucchini.

4 – Combine the veggies into the quinoa with chicken. Pour one can of the verde sauce into the pot and stir until well incorporated.

5 – Spray glass baking dish with Pam. Line glass baking dish with the refried black beans, spread with spoon.

6 – Spoon the veggie chicken quinoa mixture over the beans and pour the 2nd can of verde sauce over the top. Add diced goat cheese on top of the casserole.

Place into oven for 25-30 minutes or until golden brown deliciousness!

Add cubed avocado and non-fat Greek yogurt for toppings.

Horsetooth Half Marathon 2013

  Colorado’s #1 Half Marathon!

Runners, I recommend you make this apart of your bucket list.

This was the most challenging race of my life, just take a look at the intense elevation changes, but Carolyn and I enjoyed the scenery along the way! There were a lot of runners with smiling faces which made for a fun experience. We also felt very safe they had police force close by the entire way. The hills were very steep, especially Monster Mountain, but what goes up must come down. We looked forward to the down hill parts. My one major complaint they did not have any gatorade or gu or gels along the way so by the end I was completely exhausted and running off fumes. Lesson learned to always carry a supply of energy (which we, along with others forgot)! The race ended at my favorite brewery, New Belgium, but we were too tired to take part in the fun.


We ran for the victims of the Boston Marathon, what a tragedy. Do not let terrorists stop you from achieving your life long goals. Living in fear is not living at all.

True Food Kitchen’s Tuscan Kale

My new favorite restaurant in Denver is True Food Kitchen in Cherry Creek North

I had to recreate their famous Kale salad, so what did I do… went to my good friend Google.

I found an article with a recipe and video of the head chef!

I will say it was really good but they just make it the best. I would add less garlic because it was a bit of an overload for me. Other than that you must try it is A-Maz-ING!
